The easy way to do it is to factory reset the phone, but this does wipe everything. I found these steps here: How to change the primary gmail account on android g1 tmobile phone - 611Connect Blog | Cell Phone Reviews, New Cell Phones, Cell Phone How To but haven't tried them. Lots of notes in the comments. I recommend you read through them if you are going to try without a factory reset.

I did this but it was like chasing a mouse!
You need to make sure all 4 of these are reset to "0"K

Gmail "0"K
Gmail storage "0"K
Google apps "0"K
google search "0"K

Gmail Storage keeps trying to re create itself so you have to make sure all 4 are clear before you exit application manager.
Then open Gmail and it asks you to start and no reset is needed.
