Not sure about the HDMI dock, but the RCA cable on the Tab essentially replicates the screen on the TV, so you can use your apps on TV. I've tried at least the browser and Angry Birds, anyway.
However, it won't let you play DRM protected videos on the TV - which is hugely annoying!
