Update, I do in fact have fastboot. The options on power off are the same as before root, the power off just performs a fastboot. Excuse my question above, I got a little frazzled after fighting through the problems of flashing a recovery. It's amazing what a little sleep will do
The reason that happens is because you have Fast Boot selected in the Power menu in Settings. If you turn it off, you can boot into bootloader and see all the options again. Once you flash a custom ROM, you might obtain the ability to have multiple restart options.
