You can get the adb shell running on a mac, since its part of Google's Android SDK. Just go to the SDK website and grab the mac version
Android SDK | Android Developers. This will allow you to use the try3 script to get root. The thing you will not be able to do is run Samsung's ODIN which would get you back to factory stock since its PC only. You might want to consider Fusion or Parallels on your mac to run virtual PCs.
So basically you can root and apply custom ROMs from a mac, but if you want to get back to factory, you need a PC.
