you're probably better off rooting now, and either installing a 1.5 ROM, or one of the 2.1 ROM's that are there. When the update comes, there'll be a good custom 2.1 ROM out within hours.
There's a distinct possibility that the 2.1 update will eliminate the ability to root, and if you update to the official version, you can't go back....so root now, while you still have the chance
