yes, you could update when 2.1 comes out. You'd have to RUU back to stock to update to the official one, but then you might lose root for good. You're better off rooting now, and when the official 2.1 does come out, waiting a bit for the custom 2.1's based on the official build to start rolling out. There will probably be a LOT of them within the first few hours
