Open an incognito tab and carefully read the information, there. Incognito mode stops your browser from storing your searches, history, cookies, etc. locally, but does *not* stop servers from gathering information, as it is completely beyond the browser's control. That being said, if you start an incognito tab and don't sign in to your Google account, then of course your searches won't be saved, anywhere...
It's also worth mentioning that GNow is browser independent, so opening an incognito mode tab really has no impact on the information Google collects via GNow..
