If she really is just looking to read books, I'd stick with either the Nook or Kindle and not bother with a more costly tablet. Both of them are very intuitive so it shouldn't be as confusing to use as an N7. Never used a Fire, but I think with how limited it is in functionality, it would be pretty easy to use as well.
