I just saw that you had a gas grill. Obviously you don't need to worry about charcoal. Keep the grill on low (225-250), keep the meat away from the active burners, and to do the smoke, either buy a cast iron smoker box (Home Depot or Lowes will have them during grilling season, not sure if they have them right now) or make a foil smoker pouch. Take your handful of soaked chips, wrap them neatly in foil, then poke holes into the foil so the smoke can escape. Do this about every hour while the ribs are unfoiled.
