Meh...pork is easy to do, and ribs are really easy. You don't even need to stick in a meat probe, just cook for 6 hours. The first time that I barbecued ribs (barbecuing is not the same as grilling) I got so drunk over the 6 hours that I could barely see straight, but they still came out awesome. Just set your cell phone alarm appropriately.

If they're beef ribs, I don't know what to tell you. I am neither Jewish nor Texan; beef ribs don't exist in my world.

Beef brisket on the other hand, now there's a meat that takes practice.
