That being the case it would appear you want to stay on Gingerbread for a while.

Visit ... [Guide] How to block upgrades and updates on Motorola Bionic ... in the All Things Root sub-forum and there are instruct ins on how to keep the OTA off your Bionic.

If you can take the OTA in the future there should be no problem in doing so.

The down side of Gingerbread by the rest of us that don't have the constraint you identified is that ICS is faster (the system uses both cores) and the user interface is much cleaner. They corrected a lot of the loose ends.
