The vast majority of the public wouldn't know audio quality if it hit them over the head, as evidenced by extremely poor quality music download widely available (iTunes, Amazon, etc).
When looking for headphones, the optimal pair will have a flat frequency response and will have a very wide range. Any other variations is personal preference, I prefer the Audio Technicas.
The point is mostly mute as our phones do not have a high quality Wolfson DAC, so the audio is limited by the output.
