My biggest issue with Sense on 2.1 was the absolutely HORRIBLE dialer lag. The only other issue I really had with it was KB lag while in landscape mode. Otherwise, Sense in 2.1 wasn't bad. Of course, once I had CM 7 on there, I never touched Sense again.
