I know quite a few people who have commented on their frustration for changing out default apps be it the browser, keyboard (which I know they can't do) or maps with 3rd party ones.
I know that apple lets exceptions through for big name companies, which is why I believe the iphone has chrome available, but an individual developer cannot make an app that directly competes with an apple app. Every app gets submitted for approval by apple themselves and if they feel it competes, they reject it.
So not only does apple not want to compete on the open market, they don't want to compete in their own app store.
