I haven't played with IMAP in the default app, but the default POP and Exchange behavior is to keep a rolling history of X days. X can be 1, 3, 7, 24, 30, or "all" days. The greater amount of email stored on your phone, the slower it will run and the greater chance you will have of running into an out of memory situation. For people with light email traffic, or who regularly delete all their old emails, "all" might be appropriate. For people with heavy email traffic, or who never delete their old emails, a low number of days would be better.
I have my Incredible set to keep a 7 day history, but using Touchdown would allow me to query my Exchange server to search my entire 4GB mailbox without having to actually store 4GB of mail on my actual phone. The phone simply sends the search term to the Exchange server and waits to receive the server to respond with the search results. It's like using Google to search the web, you just send Google the search term and they reply back with the results. Your computer doesn't actually have to store the whole index locally.
