Default change from email address in gmail app

I use gmail to manage all my email accounts including my work email but i can't seem to figure out how to change the from address when sending an email from the email app on my phone, i'm probably being blind but can someone tell me how?

You need to configure that on your PC. Go to GMail and go to Settings>Accounts and Import

On that tab you can add the addresses you want to send from and then enable the option saying: 'Reply from the same address to which the message was sent'

Sorry that was unclear, all that is setup and works fine on my computer but i can't seem to do the same on my phone.

Whether I send the email from my phone or the website it still works.

As I explained in the post above. When you have that configured through your PC internet browser it will automatically use the address the message was sent to as the 'from' address. You cannot use this to compose new messages, only the messages you reply to - unless you want to set up one email address you always send as.
