Let's put it this way...
a) I agree about the market website having no info, it needs it.
b) I have probably installed 100+ apps on my device since I got it.
c) Currently I have 41, so listing them is a lot of effort, and you might not even care.
So a quick summary:
Top Game - Dojo Cubed, wonky controls that take some getting used too, but multiplayer awesomeness
Calc - HandyCalc, very slick, and on-screen keypad
Weather - Weather Channel, videos, nice display
Music - Imeem, like Pandora for streaming music or use TuneWiki for playing your sdcard music
Utility - Power Manager has helped me manage my battery life very well
Other good ones:
aTrackDog - keeps apps updated (like Windows Update)
Astro - can back all your apps to the sdcard
Missed Call - cool to manage the colored LED light
PF Voicemail+ - Visual Vmail
Ringroid - create your own ringers, notifications, and alert sounds
SMSPopup -Newest fave -pops up full txt in a semi-transparent window.
