Does anyone know why I get 2 notifications on my top bar for each email.

I get one that has the subject in.
Then one saying I have new mail in my gmail inbox.

Does anyone how to rectify this?

Sounds like you have both the GMAIL APP setup as well as the generic Android Email app. Both are collecting you emails and hence both are reporting on email status.
You will have to delete one or the other.
Personally I use the generic Android Email to get my Gmail emails
