As I recall Einstein and other intellects have had some religious quotes, although not in a hard core dogmatic way.
Also, many people with deep faith have had famous quotes that don't contain religion. Ghandi and Martin Luther King come to mind.
A couple of my favorite people for inspirational quotes are Ralph Waldo Emerson and Henry David Thoreau... Although they did engage in writings on the fringe of religious.

By the way, although I am a firm atheist, my father (an ordained minister with a master's in Theology) is a member of Mensa. Intelligence and faith are not the same thing, nor exclusive.

Brilliant Quotes has a nice widget and quotes from non-religious people. You just have to go into the categories and turn of "religious" category, if I remember it correctly. Has lots of witty quotes too and is updated every now and then with new ones.
