There are themes, but there is not a way to use them with the stock phone. You have to download a "home replacement" app. There are lots of good ones - a few being OpenHome, PandaHome and DxTop - that support themes, and there are plenty of nice themes (both free and for a price) on the Market.
As far as icons go, you can put whatever you want on the desktop. You can get rid of the icons that are there if you'd like. You can make shortcuts to websites, applications, shortcuts to direct dial or directly text someone in your contact list, and more. It's very customizable, more so than a BB. I came from a curve as well. Remember that you also have three home screens you can flip between - not one - so you can load them up with icons if you want. Or you can use one of the many nice widgets available, make folders with other shortcuts in them. Basically whatever you feel like doing. Once you get used to it, I think you'll love it.
