Well, sorry my english, it's not my main language.

I'll direct to my point.

I copy my file structure from SDCARD and External card and paste on my PC. (Thinking it's a backup, like in a Windows computer)

So I wipe my device with the same Android version (Gingerbread) using Odin's software.

After this I just replace the new file structure on SDCARD with my old file structure copied before.

But none my apps, notes, save games, etc are restored.

Just backuping the structure don't save my Android stuffs ?

And the most important question. I'll never be allowed to restore my old files or some kind friend can give any tip to fix it ?

The stuff that arent backed up are not in your SD card but in your phone's internal storage. You needed a backup app like Titanium or My Backup Pro for those stuff.
