Definitely not all apps do this.

What kind of email account do you have? If you only have a gmail, use the gmail app, which uses Push notifications, no battery loss at all. If you have something other than a gmail, consider setting that account to forward all emails to your gmail, that way you will get the emails instantly and wont use as much battery.
As far as other apps, just make sure every time you install an app, you go to the settings, and see what kind of polling/checking it does. If you dont need it to be immediate, turn it to manual.
Also go to settings-accounts and sync, and turn off anything you dont need. Most android phones automatically sync news and stocks every hour, even though most people dont use either of those.
