Default Problem with email sync period - only storing a day's worth

Hi, first of all apologies if this has already been answered, but a brief search of the forums turned up nothing.

Basically, my stock Email app is only storing about a day's worth of emails, and I want it to hold more.

I have read on other forums that you can change this under the "Period to sync email" option in settings, but when I go onto settings that option appears for a fraction of a second and then immediately disappears. Does anyone know why this would be, or if there is another way I can get my phone to keep more emails.

This is happening in two email accounts, one normal Gmail and one corporate Gmail. And I am using a Galaxy SII with the stock ICS.

Thanks, Germaine
