I've heard that you can shake your Galaxy S3 to start dialing someone without swiping your screen and whatnot, but so far I've been unable to use this feature. My screen also goes black even though I'm looking at it, despite there being a feature that should prevent this. Is this because I have enabled power-saving mode?

Yes. Power saving mode disables some of the active processes running in the background that aren't absolutely needed to keep the phone running. Not sure on your specific version of the device but you can customize the power saving mode on other versions of TouchWiz skinned ICS.
