Not sure what you mean. Are you saying you don't want to login to your GMail account in the initial setup? I don't think that's possible unless you use a different method to sync. iPhones use an Exchange server to sync to Google, which is why you can sync to Calendar or Contacts separately from Email.
You'd have to manually set up an Exchange sync for what you want, much like how you would set it up on an iPhone.
