They've backed down now, loads of T-Mobile users quite rightly kicked up a fuss and Ofcom said it's a possible breach of contract since they didn't give 30 days notice.

The new 500MB cap will only apply to new and upgrading customers now, so if you're already on an unlimited data plan you're safe.
