I have the low ding turned on and kind of like it. But in your situation you really need to know if you have touched a button. I have vibrate turned on as well but it seems to be hit or miss as to when it actually vibrates. I know when I turn my sound all the way down it really vibrates so it does work on mine which leads me to believe it is how the apps are using the vibrate hardware. I suggest checking the market for accessibility apps for people that have a condition similar to you. You might find a better input method.
