Reading, researching, understanding, and carefully following the published steps and instructions can go a long way towards helping to make your rooting efforts a successful one.
If you are considering rooting, please hold off from using HTC Dev to unlock your bootloader - there is a one click tool (the Advanced Ace Hack Kit - AAHK) that roots your DHD for you, but it does not work if you have unlocked the bootloader first (you would have to relock it).
Once you have rooted, it is then possible to install “root only” apps, such as Titanium Backup. TB allows you to remove any apps (including pre-installed carrier apps). It is worth noting that some apps, even if you don’t use/want them, could be used by your system, so it is important not to just start removing apps. Please also note that if it is safe to remove apps for one device, it doesn't necessarily mean that the app is safe to remove for ALL devices. It really depends on the services provided by the app as specified by the particular rom/build. More importantly, system apps are not easily restorable like simply installing an .apk file. And once deleted, even a factory reset will not recover them. You will have to locate and flash a stock rom image to get them back.
One option in TB allows you to freeze apps – I would suggest that you do this initially, as you can always unfreeze the app if you notice that you are experiencing any issues. If, once apps are frozen, your phone is behaving normally, then you can look to removing them. It would be a good idea to freeze apps individually, so that you will notice if each one affects your phone adversely.
It is worth noting that, if you root and install a custom ROM, all the carrier bloatware (which is tied in to the ROM already on your phone) will no longer be on your phone anyway.
It is possible, from within the advanced settings of some custom ROM's like CyanogenMod, for example, to Over/Underclock. It is also possible to do this using SetCPU from the market.
Over/Underclocking means that you can set the CPU either higher/lower than it was when in factory state. This can result in your phone being faster (for multitasking) or slower (to save battery), but must be treated carefully - prolonged overclocking can damage your phone.
undervolting
Undervolting is only supported by certain custom kernels and would usually have a link where you download the kernel from. It is used to save even more battery.
It is possible from within SetCPU (with some custom kernels on some devices) but, as it is NOT possible with all custom kernels, the best place to get any links to UV scripts would be where the kernel is downloaded from.
Here is a link on how to flash a custom Kernel AND an undervolting script. The process would be the same, even if you were using a different kernel/uv script.

ROM's with no traffic in the ROM thread have been removed and new ROM's have been added. I will be trying to stay on top of this a little more... if anyone comes across a new ROM that they want including/if I've missed any, please feel free to let me know and I will get them added
