It seems no matter what I put my settings to, the home screen always has to change orientation when I rotate my phone sideways. This is quite an annoyance. I just want the home screen to be in portrait at all times (unless I open my keyboard). I'm currently on Smoked Glas 5.0.1.

I know that some of the dev's set their roms so that it will not allow you to rotate it in landscape mode without sliding the keyboard open. Other roms will auto-rotate and you cannot turn it off without turning all rotation off (Settings > Sound & Display Settings > Orientation). If you uncheck the Orientation, it does not just disable the home screen rotation, it disables all rotation (like when using the browser).
I'm not sure what the Smoked Glass rom is set to as I haven't played with it much. You may not be able to turn the rotating off. I know that the UltimateDroid rom do not allow for auto rotate on the home screens, and I believe that Bugless Beauty acts the same way. You might want to try a different rom if that is a big deal to you.

Unchecking Orientation in settings does not disable my home screen auto-rotation. I keep that option turned off because I never want the screen to change orientation unless I have my keyboard out.

You probably can't disable that functionality then. Might want to try a different rom that locks the home screen in portrait view if it is that big of a deal to you. I know that Bugless Beast and UltimateDroid roms are both portrait view only.

Riffdex, you could try spare parts but I don't know if it would work for you. I have Ultimate 5.0 on my phone (spare parts comes included in that rom) and I have a setting for enabling or disabling my home screen. It does not matter what I check...I can't get the home screen to rotate when I enable it.
Do ya'll know any ROMs that will ONLY rotate the homescreen when the keyboard is slid out? Does Bugless Beauty do this or is it always portrait, even when the keyboard is slid out? If it does I will probably flash that ROM?

Bugless Beast and UltimateDroid are both that way. I don't know about DroidMod but I really haven't played with it much. Both BB and UD roms now have new versions that are of the ESE53 Build and are really nice (from what I've experienced with UD and I've heard good things about BB). One of those would be the way to go IMO.
Hmmm well would yall say I should get UD or BB? Are there any fundamental differences between them? Right now I'm leaning BB just because I hear it mentioned a lot and a lot of people use it.
EDIT: Well I decided to just install BB, I've heard great things and a new version was released like an hour ago, so I figured I'd try out the new version. First impressions are, it seems a lot faster and smoother running than any ROMs I've had since I've got my Droid. I guess that is from the ESE53 engine. I am definitely happy now that I have a screen that will not auto-rotate.
