Cool droid x settings menu issues

I am having trouble with my droid x.. it's running 2.3.3 and i just rooted it... however it doesnt seem to be installing ALL of the ROM's i've tried several different ones. that being said, Now that it is rooted and verified with root checker (market) when I try to acess the settings menu it does not exist causing several problems, i cant turn on USB Debugging and I can't allow apps not from the Market. I've also tried hard reset and tried to flash the update.zip but it fails (error7), If anyone has any tips or pointers I'd greatly appreciate it
