Confused Phone randomly shuts off (details inside)

After royally f**king up my Epic 4G with OneClickRoot a while ago, I unrooted my phone two months ago, and it worked okay for a while, but then the phone started shutting off when off the charger even if the battery was at like 90% (!?!??!?!)

I flashed the Gingerbread FC09 ROM and rooted it a few days ago and it works SOOOOOO much better, BUT I can't seem to run more than one or two apps (depending on which one) when I don't have the phone on the charger.

For example: I was listening to my music on doubleTwist earlier and the battery went down to like 60% or so. I opened up Boat Browser to look up something and as it was loading my previously opened pages it just cut off. Am I overworking the phone or something? Because I was able to run doubleTwist and Facebook simultaneously before that...and I can run Instagram while it's off the charger for a while too...(I don't know if I can do that at lower than 60% because I've been at home for these past four days).

Should I flash another ROM or should I just keep the number of apps I run simultaneously to one or two? ._.
