Default Rooted Samsung Galaxy S2 ET4G - Now What? (And other Qs)

So I bit the bullet and as I said before, I waited until after my baby was born (had to have a functioning camera). First thing I did was uninstall some garbage apps/demos that came on the phone (Nova and some of the Sprint poop)

Can I uninstall Kies? How about MediaHub? And what about TouchWiz?

What are some good root specific apps that I should consider?

Yep there are other launchers all found on the Market...Apex, Nova, ADW,Launcher Pro...

See which one you like...You can uninstall Kies not the drivers...
First Root app to get is Titanium Backup Pro...A must...also Mobile Odin...

You can install the ICS Camera on aICS Rom...also Enhanced Camera on XDA...

If you are still on Gingerbread, this app is helpful and good for a few laughs WiFi Kill

SetCPU is awesome if you have a kernel that is compatible, and Android Police put together a nice four part comprehensive list of must have root apps.

I would really like to get ICS but I know that they best ROMs won't be available until after the ICS release.

They are there now...All the Devs will do with ICS is theme and do sum custom modifications which you can do when it releases...But with the Leaks out there now You can have ICS right now with custom modifications and themes...They are there now waiting for you to try...You are already rooted Go for it already...

Actually the ROMs that are out now are great. With the exception of a Nexus phone a custom ROM will ALWAYS get you a good current version of Android long before manufacturers do because they have to take time to screw it up with their overlays and carrier bloat.

CM9 is AWESOME on this phone, just follow this install instructions closely, it is possible to brick so you can't restore if you don't follow the directions.
