Default Thinking about thinking about rooting my Eris

Before I even begin reading up on the process, I've a few questions regarding possibilities. Would I be able to:

1. Pick a different Default Dialer to the Phone key?
2. Assign a different function to the Phone key press and hold?
3. Get rid of the Sense Lock Screen and just use Pattern Lock?
4. Gain full 360 degree rotation of the phone?
5. Stable overclock?

All without getting more glitches?

Oh, and most importantly, find someone who will hold my ignorant hand through the process?!

1. Yes It can be done on some roms.
2. Yes it can be done its as easy as editing a txt file.
3. you can get rid of Sense lock but you will have the android lock.
4. Yes some roms have this.
5. most roms have over clock its up to you to figure out what a stable overClock is for your phone. IE mine can only go up to 748 other can go to 806 or higher so its different for everyone.
