With GSB, all of the htc and verizon bloatware has already been removed. I've found cache2cache to be the most helpful in making more room for apps. One thing you can do is move Google Maps updates and things like that from data/app to system/app. Also, from system/app, I always delete Rom Manger, the stock email (I only use gmail), and the file manager that comes with the ROM.
Also, this thread was helpful to me when I ran stock rooted: Remove bloatware
