Open app drawer, click on people, menu, view, uncheck show auto gmail contacts. If you do not see that option ur phone software or gmail is not current and you need to update. Anytime you send an email from gmail web browser or from the phone gmail stores the addy (at the server)
Most other popular email clients offer the option to turn it off. Gmail has not yet and every email you send to is automatically added to your address book. The problem with clearing data is that once synced again it just pulls that info from the address book on the server
