I had CM 6.1.0 on my Dream but I decided to downgrade to 5.0.8. Now that it's done, how I can reinstall all the apps and their data I had (mostly on the sdcard) at once, given the fact that I didn't make a Titanium backup before flashing (I made a Nand backup though...)

not sure how nandroid works, but download Astro from the market, and use that to explore your files, should be able to locate them and re-install from there..

so I just find the .apk and click them? and what about the associated data?
