Default Stuck at "Verizon Wireless" screen in boot

Mine is a Verizon P1800 - US Purchased - used only on WiFi.

I rooted it so I could use Titanium backup. Did not go to Gingerbread, used Boush kernel.

FINALLY Verizon started pushing out a Gingerbread update but, presumably because either the device is rooted OR it has the Boush kernel, that update wouldn't "take." But they kept pushing it at me over WiFi. For over a month I've just ignored it - declining the update.

But now something bad has happened. Last night I turned on the Tab and it went through the boot sequence past the SAMSUNG word, the Verizon chime sound, and then stops at the stylized Verizon Wireless logo - and goes no farther.

Some info:
* In this "stalled state" I can get adb to talk to the device but it won't respond to su so root is apparently lost
* I can boot into recovery (stock recovery - no non-stock recovery software is installed)

I'd like to retain the apps and data on the machine if possible, if not ... well, so be it.

Recommendations and, finally, any recommendation on restoring stock so it will accept and properly install the Verizon pushed Gingerbread update?
