I'm sure I missed some. Luckily I backed up all my apks from my Inc in case some of the updated versions suck. Happens sometimes. Dophin and Fring come to mind.

Apps on my Evo that I'll transfer over:

Jorte - awesome calendar

ATK - it helps battery and especially memory (just my experience!)

Dolphin HD - browser - might not be using this on the X though

OpenTable - great for restaurant reservations

Backgrounds - I like to change mine almost daily!

TuneSync - for wifi syncing my android with my mac based itunes

Ringdroid - Very easy to use - makes ringtones out of your own mp3s (there is a native way to do it too though)

Barcode scanner - very handy!

Gentle Alarm - not sure if I'm going to use this on the X or not yet, but it's a great alarm app

PDANet - tether computer to X, haven't tried it yet

Raging Thunder 2 - cool racing game

Movies

Probably some more when I search through the market and 'must have' posts!

Just a note to android beginners. At first I was all over task-killing programs. But after deleting it I noticed better overall performance from my phone (Droid). I am NOT saying to not get any of these apps...just letting ya know.:)

I've noticed that when first starting up, certain apps start on their own. Killing the ones I don't need seems to have speed up my G1, however the Android operating system is designed to kill apps of it's own accord when it needs the memory.

As an Android newbie (coming from the iPhone for the last 3 years), I can't tell you how helpful it is to see a list of good apps!!
I feel your pain. WM user here and I have two itouches; a 1G previously jb'd and a 3G now on ios4. I can say that android has replacements for all the great apps on iphone. Fear not. I had some root apps like wifitether and a commandline terminal for issuing su commands locally. Those will have to wait with the X. You're going to love having a real file system on your phone. Facebook on iphone is still the best version though. Crazy since FB is MS. You're going to like the RED map too LOL. The only time I've had to plug my Android in to a PC was to root it. Everything can be done OTA including copying files back and forth. No silly restrictions about having to use wifi to do stuff (unless you want to talk and surf at the same time). However when itunes works it is simple for syncing. I doubt you will have any "oh crap, android can't do this obvious thing I assumed it would". Be prepared for a much more customizable interface with many many settings and options.

wifi analyzer mentioned by someone else is great too for configuring APs and picking the proper unused channels that don't overlap with neighbors.

Maybe Launcher Pro or ADW - 2 of the best launcher apps. I give the edge to Launcher Pro for having the scrolling dock area. Its too complicated on ADW.

Tapatalk - forums that use it, it makes it easier to browse and post on forums from the phone.

PhoneMyPC or log me in - remote desktop apps

eStrongs File Explorer - this and Linda File Manager can do file transfers to and from your PC over Wifi.

Beautiful Widgets - very nice clock and widget app.

Home Switcher - easy switching of launchers

I woulda said Swype but it comes already installed......:D
