Root Trying out a new ROM, if I want to go back...?

Yep, a Nandroid backup is an exact copy of the state your phone was in at the time you made that particular backup. I always make a Nandroid right before flashing a new ROM. That way if I don't like it, I just do a restore and everything is restored as if nothing had ever changed.

BTW, are you going to CELB Froyo 1.5 (2.2), or CELB 2.8 (2.1)? If it's the latter, be sure to partition your SD card first if you haven't done so yet (and make sure to backup your SD card to your computer before partitioning, as this erases everything - then just copy the files back to the SD card after partitioning). If it's the Froyo version, you need to reformat the SD card I believe, and get rid of the partition (2.2 won't work on a partitioned SD card).

I'm using CELB 2.8 (the 2.1 version) and I love it.

Crap, I went with 2.8 (not ready for FroYo just yet), and I forgot about the partitioning, but whats interesting is that its running pretty much fine, except without the A2SD feature, which is what the partitioning is for, right? What was really interesting is I havehad 128 mb in internal phone storage, now its at 114 mb. But either way its a lot more than stock or with EE.

Was wondering though, are the following known bugs?
- Live Wallpaper FC'ing (Except for Polar Clock)
- Auto-Brightness not working
- Trackball Notifications (No settings?)

I'm not sure about LW; I do not use them, nor do I want to.

Yes, auto-brightness seems messed up on all of the Eris cynaogen ROMs I have tried, including kaos.froyo, by the way.

Trackball notifications - no, ELB 2.8 uses the LED to notify, from what I noticed. kaos.froyo just changed that to flashing the trackball with V24; prior to that, it also used the LED.

I love CELB 2.8, I went from EE to it and it definitely seems the faster. The ROM isn't as polished mostly because of the lack of Sense I think, but it's a no frills, fast ROM which is really what I want. The only things I really miss are the Sense calendar (I don't want to pay for a calendar and the pure grid calendar doesn't cut it) and the email widget, but I'll exchange that for the speed.
