i've not used touchwiz before, but have used sense for about 30 days. i shouldn't have a problem adjusting, but there are a couple of items that stood out as bad design (so far):

1) waste of space at top of portrait view, the 7 dots to indicate screen positions.
2) the four icons at bottom of portrait view (or on right of landscape) are not customizable.

not deal breakers by any mean...
 
Yeah, on Epic this feature is broken. On Captivate, Vibrant and Galaxy S, when you tap menu on app launcher or home screen, there is an option to edit, but no such option on Epic. So they changed the lock screen (disappointment on its own) and removed the ability to edit app launcher/home screen arrangement.

It's my understanding, that the Epic does not have TW 3.0, it has 2.5 - supposed to get the upgrade with Froyo 2.2 when that launches for the Galaxy S line.

I could be wrong, but have read this in several articles as well as saw an interview with a Sprint CEO (or whatever he was) as he was asked about this. It was Sprints decision to do TW 2.5 for now, something to do with a compatibility issue - that they are working on...?

It's due to the landscape orientation of the Epic. TW 3.0 doesnt have those features.

This is why I stated in an earlier post that this is the most IPhonesque Andriod phone I have seen. The dots and the bottom icons all emulate the IPhoney. Even the widgets look more IPhoney to me than other Android phones. I think Samsungs goal with the Epic was to make a slider Iphone. ;)

LauncherPro will fix all that stood out for you. It's free. Though I like it so much I bought the Plus edition with extra features. With LauncherPro you can have a scrolling dock to put any icon you want.
