Only 3 home screens?

Go to the market and install "LauncherPro". Hit the home button and make LauncherPro the default Home. Hit the menu button and go to preferences. In the settings you specify up to 7 screens.

After you get everything set up, go to the Manage Applications in the phone settings and view all applications. Scroll to "Launcher" or whatever the stock/previous launcher is and uninstall it. If it doesn't give you the option to uninstall it, hit the "clear data" button to keep it from hogging any more RAM as it needs to.

Enjoy.

Yeah, LauncherPro is probably your best option. I only use two home screens (I don't know what you guys need all that room for...) and I still use LauncherPro because it's got so many more options, my favorites being the dock on the bottom and the ability hide apps from the app drawer (SO USEFUL).
