How much space do you save...

How much space to you clear up by rooting and getting rid of all the AT&T bloatware crap?

Nowhere near as much as you can get for under $8 (2GB MicroSD card, free shipping). And that solution doesn't require rooting, fancy software or dealing with tricky/risky hacking techniques.

Freeing up space shouldn't be your priority in taking this on. Most of the people doing this are just OCD or already rooting their phones and have the other software installed for other reasons.

Not enough to make it worthwhile unless you're big on "principle." Forgive the qualitative reply vs. the quantitative one you seek, but there's so much in the way of memory (native plus expansion capability) that I'd forget it.

Don't want bloatware to load? Autorun Killer, free from the Market.
