Starting from fresh - full reboot

My phone is playing up, particularly signal and reception wise.

So I want to 'format' the phone back to its factory settings and start again.

However, I have a few questions.

Firstly, I have noted what apps I have downloaded. Apart from the ones on the SD card, will I have to pay for the paid apps again in the Market?

Will my phone revert back to 2.1?

What's the best way to reboot the phone?
 
You won't have to pay, no...
As long as you use the same google account id to access the Market.
You won't revert back to 2.1, a factory reset will put the phone back to what ever ROM you're on but as if it's a new install
Yes, it just resets to defaults and clears the memory.
Best way to wipe all data is to turn the phone on holding the back button and once booted to the white screen with the 3 Androids select 'Clear Data' (or whatever it says) and go from there
That does the exact same thing as a factory reset, but is more tedious to do. Just do a factory reset to wipe the phone. It doesn't touch the memory card either.
