i have a couple questions:

should I be backing up EVERYTHING every time I flash a new ROM?

In other words, will flashing a new rom wipe out my contacts and all my apps?

if so what all does ROM manager save when I do a backup or restore point?

also, how do I delete apps I don't want that came with the ROM? such as chrome to phone or the default browser in favor of dolphin browser

IF you have your contacts in your gmail account (which I HIGHLY recommend) then they will come back as soon as you sign in to said account in your newly installed rom. The new rom install will wipe out all apps and in the new rom you will initially only have those that are a default part of the rom. You can use Titanium Backup Premium to backup/restore apps, or you can use Appbrain to reinstall all your apps.

I believe ROM manager does a nandroid backup which will backup everything.

use titanium backup to backup your apps

most people would recommend doing a nandroid backup for every ROM along with a titanium backup (you really only need one Ti backup as long as you keep it updated when you install new apps)

a ROM is like the operating system (think windows 7, XP, etc)

a kernel is how the phone communicates with the ROM (or that's my understanding/how I think about it)
