What advancements do Dolphin and Steel offer over the stock browser?

nothing too major honestly.
it has tabs, the ability to store cache on the SD card, multi touch (nothing major for us, just other android phones that do not have multi touch on there stardard browser), you can skin it too which is pretty cool. but like i said, since the update its been crashing so it sucks right now :(
regarding steel, i just got it today so...still testing. though, i kind of hate it already.

ya that dolphin update is no good you have to reinstall it from the new version... if you look at the description in market it tells you what to do.... i like the new version... do i really need flash? i'm so used to not going to flash sites cuz of my BB curve. hmmmm

I ran some tests a few weeks ago and found that Dolphin browser was loading pages in sometimes half the time it was taking the HTC browser to do the same.

Usually it was cutting off a quarter of the time or so, which was nice.

That being said, Dolphin browser is so ugly and clunky, and multitouch on it being horribly laggy and unpredictable, that I went back to HTC browser and haven't looked back since.

Flash doesn't matter to me, none of the sites I regularly use require flash, so I simply have plugins turned off in the HTC browser.
