Hey, Speeddy posted this over at Alldroid:

[Release] 2.0.1 stock to 2.1 with root!

Speeddymon said:
As for benefits, Pete's update.zip is 60-70 mb and not signed, so it will not install on a stock 2.0.1 recovery image.

This update.zip is 15mb and will install on the 2.0.1 stock recovery image. It is everything you need to go from a brand new out of the box 2.0.1 phone to a rooted 2.1 phone.

If you don't want to run the command prompt commands, I uploaded the combined file a little later on in the thread. (EDIT, actually, that's against the rules at Alldroid to post the update.zip. Oops)

This should get you from stock 2.0.1 to ESE81 with root.

Don't run this if you are already on ESE81!

This only works on 2.0.1 stock. It will fail the signature verification on 2.1's recovery.

I know this is probably a newbish question, but is there something special I have to do in order to go from a 2.1 ESE53 base ROM to a 2.1 ESE81 base ROM?

No. This isn't for rooted users at all. If you have a custom recovery, you should have no issues moving between cooked ROMs, so long as you follow the installation instructions.

Yeah, uh, that's the exact same thing I posted in this thread 3 days ago :p

For the last time, as of now, if you did the 2.1 OTA, the only way to get root back is to .sbf to 2.0.1.

If you do that, then this method will let you get to 2.1 ESE81 w/ root. But you cannot use this update.zip to go from 2.1 un-rooted to 2.1 rooted.

As of 4/4/2010

btw, if anyone with a STOCK 2.0.1 wants to try this but doesn't know/want to manually combine the files, I have made the file as per Speeddy's instructions, and I can PM you the link.
