I'm already on MJE baseband and I have the Odin file for it, so even if something does happen and it does soft brick, I can Odin back to stock. Yes, it's a lot of 'work' to have to start over, but with a TWRP backup, once it's rooted and SS installed, it's just a matter of restoring.
With my Note 2 I ran a custom ROM, granted it had an unlocked BL, but running a custom with SS is 'similar'.
I read a lot about it this afternoon and I like the ability to read the 'actual' available memory on my phone (I'm weird, I know). I used SS on my Moto Bionic too so I'm pretty familiar with how it works and I honestly don't see a reason to keep the stock ROM on the phone when I'll never use it. Especially when I can just flash it back if for some reason I need it.
