I'm sure there is an easy answer to this but how on earth can you opt for just a random play all? I've searched through the options but none of them seem to offer just a random play all feature but I'm sure it's there.

Has anyone come across this before? Is there a hidden option somewhere?

I think this is what you mean.... start music player -> whilst in 'all' tab, play a song, or press now playing, tap the screen and the duration bar should come up, on the left theres an interwining arrows icon, tap it, it turns blue and you've got shuffle mode. the one on the right cycles from repeat single, repeat all or play all once.

Hey I would suggest you one android application " shuffle music player " in android market, its shuffling capability is just awesome. You can shuffle as many time as you want and it will choose random songs every time and best part is it will never miss any song.
