Oh my god! They killed android!
You bastards!

I had a notification on Monday morning that I needed to update two apps - Llama (an app for changing your settings based on location) and Astrid (a task manager). I updated both and the phone froze so badly I had to pull the battery. Now I can't get it to boot: I turn it on and I get the HTC slogan, carrier logo then blackness.
This is an HTC Desire S. I haven't rooted it whatever that is. The software was all up-to-date; I couldn't tell you what version that was but whatever's the latest that will run on a desire S is what i had.
Can anyone point me to a solution please?

Try holding the volume down when you try to power it up. See if that gets you anywhere.

When doing a soft reset, remember to take the battery out for at least 30 seconds.

You might also want to try turning the phone on without the SIM and SD cards inside.

Try charging it via the mains (leaving it connected for as long as it would take to charge your battery)

Also, try connecting it with the USB to a PC.

I haven;t had any joy with any of the above. I think it's time to reinstall/reset/whatever - nuke the operating system, even though that means losing data. How would I go about doing that in the circumstances please?

Sounds like you're asking for info regarding a factory reset (hard reset). This will delete all apps and data you installed on the phone, resetting the phone to the original software state you received it in.

Here are the instructions from the Desire S User Guide.

1. Remove the battery, wait for a few seconds, then reinsert the battery.
2. Press and hold the VOLUME DOWN button, and then briefly press the POWER
button.
3. Wait for the screen with the three Android images to appear, and then release
the VOLUME DOWN button.
4. Press VOLUME DOWN to select FACTORY RESET, and then press the POWER
button.

Now it won't turn on at all. I only got this as a replacement for another Desire S which overheated and ate a battery every 6 hours or so and now this one is a paperweight. Am I just unlucky or are they not very good?

Yours is the first Ive heard that does that. Its obviously defected if it wont turn on. Take it back again.
