well, lets clarify some things before you jump willy nilly into it. which rom are you running? also the modified apk is the standard launcher, aka "Home" not "HTC Sense". in order to use it you will need to clear defaults on HTC Sense and set/start using Home instead. that means 3 homescreens, and no htc widgets. however i think the speed increase and availability of 3rd party widgets makes it worth it, as well as a fresh look until we can get some new rom love.
btw here is what it looks like on my phone currently...
note i also have modified my icons which is not a part of the launcher modification. if there is enough interest i can put together a pack of my modified apk's. it simply consists of the 2.1 icons and the launcher mod. both of those items are available seperately elsewhere if you look hard enough, but they are either incomplete, unfinished, or have too much i wasnt looking for. thats why this is my personal mods, simple and to the point.

That's perfect! Sounds like you have exactly what I am looking for. I am currently using Open Home + Better Cut to get the 2.1 look. Your option will workout much better.

I'm running Fresh 1.1, and Gumbo Kernal....will that work? I love the new app drawer for the phone and can totally live with three home screens as opposed to seven, that is until someone comes out with a rom for this app drawer AND seven home screens

I found this doing some research on getting the 2.1 Launch Drawer APK or ZIP.....plus it has 5 screens! Does anyone know if this will work with the Sprint Hero or if it doesn't, perhaps a way to just backtrack and "unflash" it back to what I have now?

okay guys i will put together a pack of the modified apk's shortly -- though let me warn that i havent looked into making a "flashable update zip" -- i do it the "hard" way -- meaning i push each one via adb. on the upside though, i have made a simple text document with all the commands needed that i just paste into terminal and it pushes them all so if i reflash a rom its fast and simple to get my mods back. if someone wants to turn it into an update zip, feel free. or it could be turned into a metamorph theme very easily as well.
